Sausage Eggwich

Ingredients

12 slices of Silver Creek Turkey Summer Sausage*

6 eggs

6 English Muffins

6 slices of cheese, your choice of flavor

Butter for muffins

Spinach, optional

Salt & pepper to taste

Instructions

Slice summer sausage into your desired thickness. Our Turkey summer sausage is amazing in this recipe, however any of our sausages would work. Another favorite is our Silver Creek Garlic Beef Summer Sausage.

Spray a large frying pan with cooking spray and warm sausage over medium heat. I like to let the meat brown a bit. Remove from the pan and set aside.

Start toasting your English Muffins, so they are ready when the eggs are fried. Butter the English Muffins as they come out of the toaster.

Using the same frying pan, add a bit more spray if needed for cooking eggs. Fry 6 eggs in the pan. Salt & pepper to your taste preference.

It’s time to assemble your items. I like to place a slice of cheese on the English Muffin, add a bit of spinach if you like spinach, place an egg on top of the cheese/spinach. Place two slices of sausage on the egg and cover with remaining English Muffin.

Enjoy! Easy peasy. A meal to sit down and enjoy or take on the run.
